Cube pepper (tail pepper) from Indonesia. Originating from Java and other Indonesian islands, this pepper is dominated by a warm, warrior-like and spicy-peppery note that is somewhat reminiscent of eucalyptus. Cubeb pepper is harvested while it is still green and dried in the sun until it acquires its typical black-brown colour. The refreshingly hot cubeb pepper with its menthol note has antiseptic properties and is very popular in Ayurvedic cuisine. It is ideal with pepper and spice mixtures such as ras el hanout, fish dishes and seafood.
