Stew with coriander
Portion for 4 people
- 1 kg mealy potatoes
- 600 grams of carrots
- 1 Pastinake
- 2 onions
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- olive oil
- Salt and pepper to taste as needed
Peel the potatoes, carrots and parsnips, wash and cut into large pieces. Cook the vegetables for about 15 minutes. Peel the onions and chop them into large pieces as well. Fry the onion pieces with the coriander and cumin powder and some salt and pepper in olive oil. Finely mash the cooked veggies with a traditional masher – trust us, an old-fashioned masher just tastes better than a blender!
Mix the fried onions into the stew. Tastes delicious with smoked sausage, bratwurst or pieces of bacon. Or really spice up the stew and serve it with falafel – also a great alternative for vegetarians, by the way.
